The cemita (pronounced seh-MEE-tah) is a Mexican sandwich, originally from Puebla, offered by street vendors there. Dorado Tacos & Cemitas in Brookline offers a version tucked inside a soft, eggy, sesame-seed roll similar to challah or brioche. Inside are layers of avocado, quesillo (string cheese), chipotles in adobo, black beans, cilantro, and either mushrooms, chorizo, steak, chicken, or pork ($5.99). In Puebla, cemitas are made using a pungent herb called papalo. According to chef and co-owner Doug Organ, “Even the Mexican locals think it’s distasteful, finding it akin to cilantro on steroids.’’ He loves the little sandwiches because of what he calls their “craveability.’’ See if you agree.

Dorado Tacos and Cemitas Brookline has plenty of taquerias, but Dorado distinguishes itself by offering cemitas, too. These Mexican sandwiches are layered with avocado, black beans, chipotle adobo, cheese, cilantro, and your choice of meat. Another distinguishing mark: three versions of fish tacos, a dish chef Douglas Organ was known for at former restaurant Cafe D. Extra props to this cute little spot for being earth-friendly, with biodegradable utensils and more.

The joint effort of a former Californian and a Boston chef, the new taco spot Dorado brings authentically fine-tuned Mexican to Boston's Brookline area. When myself and two other former Californians (credit one of them, photographer-savant James Ryang, for these pics) were invited to visit recently, we left longing for a similarly well-priced and delicious restaurant in NYC—no small compliment coming from a group with higher-than-average standards for tacos. Down the street from Allston Village in Brookline is a new Mexican hotspot with a seemingly maniacal dedication to freshness and environmental sustainability. From the flooring made from post-consumer recycled materials, to the tables made from wood salvaged from the walk-in cooler that the previous tenants had, to the corn-based biodegradable cups, there's a serious effort here to minimize impact on the planet.
